Persimmon and Prosciutto Salad
As the chilly season settles in, persimmons become one of my favorite ingredients to enjoy. While they are naturally sweet and delicious on their own, incorporating them into dishes can elevate their charm and allow you to experience their full potential.
Today, I’m excited to share a recipe for a Persimmon and Prosciutto Salad—a dish that’s incredibly easy to prepare but looks absolutely luxurious!
Ingredients
1 persimmon
1 ear of sweet corn
1/4 carrot
A handful of green leaf lettuce (baby greens or arugula are great alternatives)
Prosciutto (as much as you like)
Your favorite cheese (burrata, mozzarella, or feta work beautifully)
Olive oil and black pepper, or a vinegar-based dressing
Recipe
①Prepare the ingredients: Slice the persimmon, cut the sweet corn off the cob, and julienne the carrot.

②Sauté the persimmon: Lightly sauté the persimmon slices in butter until both sides are golden. You can leave the skin on or peel it, depending on your preference.

③Build the base: In a bowl, combine the green leaf lettuce (or your choice of greens), corn, and carrot. Toss them together with olive oil or your favorite dressing.

④Plate the salad: Transfer the tossed greens to a serving plate and arrange the sautéed persimmon slices on top.


⑤Add the finishing touches: Layer prosciutto slices and your chosen cheese over the salad, arranging them beautifully.
