I made a quick and creamy pumpkin soup using vegetables from my fridge, ground chicken, milk, and consommé. It’s so simple and delicious!
Ingredients
- As needed: Pumpkin, Broccoli, Napa cabbage, Carrot, Celery, Onion
- 200g ground chicken
- 400ml water
- 400ml milk
- 2 tsp consommé or chicken bouillon
- Salt and pepper to taste
How to make
1. Microwave the pumpkin and broccoli until soft and set them aside.

2. In a pot, sauté the chopped vegetables (except the cabbage leaves) with butter or oil.

3. Add the ground chicken, season with salt and pepper, and cook until it’s fully done.

4. Add the Napa cabbage leaves and pour in 400ml of water. Bring it to a boil.

5. Once boiling, add 400ml of milk and 2 teaspoons of consommé (or chicken bouillon).

6.Add the microwaved broccoli and pumpkin. Adjust the flavor with salt and pepper.

And it’s done! A warm, creamy soup perfect for a cozy meal. Give it a try and enjoy!

This pumpkin cream soup is comforting with its natural sweetness. Napa cabbage pairs perfectly, and adding chicken mince makes it hearty.
You can enjoy it as is with milk and consommé or make it creamier by adding flour when sautéing the veggies😊
